It’s one of the most ordered soups on the menu, and for good reason. The intoxicating, rich flavors, creamy, melted cheese and French bread are loved the world over. Merci beaucoup, King Louis XV. For legend has it, it is this royal highness who invented the brew while hunting in the 17th century.
A few tricks on making perfect French Onion Soup:
- Keeping your onions in the refrigerator makes crying while slicing slightly less likely.
- Be patient, onions take a long time to brown. Be sure to keep stirring, so they don’t burn.
- You can add a little sugar along the way to deepen the color of the onions.
- If your soup turns out a little lighter than you like, try adding a teaspoon or two of Kitchen Bouquet. It’s cheating, but it will give your soup flavor, color and body.
- An excellent shortcut recipe from Rachel Ray will get you there in 35 minutes.
